Clairin 2020 Sonson is a cane syrup brandy produced in Cabaret, a commune in Haiti's Arcahaie district.
The syrup is made from the juice of the indigenous "Madame Meuze" sugarcane from the 2020 harvest, a variety that covers approximately 25 hectares interspersed with banana trees and other fruit trees. The sugarcane syrup ferments spontaneously using natural yeasts, then is distilled by Stephan Kalil Saoud in three-plate copper Creole columns heated over an open flame.
The wine is bottled without any reduction in alcohol content.
