The secret of its roundness on the palate is a month's finishing in a barrel that previously contained sherry.
Nico's tasting notes
The nose opens with a pleasant profile of coconut and toasted oak. A certain desire to forge ahead emerges from this rum, a willingness to show character, and the concentration is palpable despite a little tickling from the alcohol. The toasty woodiness is encrusted with slightly hard spices, but these contribute to the dynamism and give a darker edge to the gourmet oak (vanilla, coconut, tobacco).
With aeration, the sherry cask unfolds and reinforces the rigor. The tannins are gripping, sometimes even a little harsh and pungent, but this is in keeping with a mature, elegant bitterness. The nose is well established, with black and red fruits complimenting coconut and toasted wood.
The palate is rather dry, with astringent tannins and a wood burn that brings its share of charcoal. But the fruit shines brightly enough to offer a tasty, vanilla, toasted coconut mid-palate. Roundness then takes precedence over explosiveness, and this time we feel a desire to calm things down.
The finish is thick and toasty, with coconut stretching out in length, carried by sweetness.
