Juste Macouba is an organic white rum from the JM distillery
This expression with a crystalline color comes from the 2022 harvest. It is made from the blue cane variety cultivated in accordance with the EDDEN project. This project, whose name means “Committed to the Sustainable Development of our Ecosystems and our Nature”, aims to preserve the biodiversity and nature of Martinique.
This white rum reflects the know-how of the JM distillery. It has benefited from a 24-hour fermentation, then a distillation in a copper Creole column. A slow reduction over 9 months with pure water from Mount Pelée precedes bottling.
