Bay of Treasures

The Galion farm, the origin of Baie des Trésors rums, is located in the east of the island of Martinique. Since 1849, it has supplied sugar cane to the factory of the same name, the only one still in operation on the island. With 750 hectares planted and some 30,000 tonnes harvested each year, it is responsible for no less than 20% of Martinique's sugarcane production, making it the island's leading producer.

The company has extensive knowledge of its terroir, which extends around the Caravelle peninsula. The idea of making an agricultural rum came naturally, as did the name Baie des Trésors, which recalls the bay bordering the tip of the peninsula.

The estate has chosen the Saint James distillery, a long-standing partner, to distill the juice from its precious cane. Within the framework of theMartinique AOC, personalized specifications have been drawn up to ensure that the Creole columns of the famous Sainte Marie distillery pay tribute to the specificity of each parcel.

The parcels of land are at the heart of the Baie des Trésors philosophy. The plots of Fond Basile, Micholo, Brin Amour, Morne Carrière, Spoutourne and Dufferet all have their own unique exposure to rain, wind and sun. These micro-terroirs are reflected in every Baie des Trésors bottling.

From plot to aging

The cane juice from each plot is therefore fermented and distilled separately, and the same care is taken right through to the ageing process. Lengthy studies have been undertaken to define the type of wood best suited to each type of plot. Each expression is aged separately, in American or French oak barrels, with the occasional touch of Caucasian oak. No sugar or caramel is added to adjust the color.

Pour le rhum Fleurs du Vent, issu d’une parcelle sèche, c’est le fût de chêne américain qui a été choisi. Pour le rhum Fruits des Pluies, qui vient d’une parcelle humide, l’élevage se fait en chêne français durant 13 mois au moins. Quant-au rhum blanc Plein Soleil, c’est également une parcelle plutôt sèche qui a été retenue.
