Brut de fût

A rum bottled without reduction, i.e. at its natural degree, after ageing in wood, is called a brut de fût rum. By reduction we mean "dilution with water".

Many brut de fût rums have been launched in recent years, with age counts ranging from 1 month to over 15 years. It should be noted that brut de fût is not synonymous with high proof. The degree at bottling is that at cask release, but this does not indicate the degree at still release, or whether the rum has been reduced before casking or during maturation...

Les distilleries, avec l’aide de leur maître de chai, choisissent elles-mêmes le degré de mise en fût. C’est une information qui est souvent gardée secrète par les maitres de chais. Un degré d’enfûtage bas permet d’obtenir des arômes différents.
